Husband suggested we grab Sunday brunch at Kitchen and Rail in Eagan, Minnesota and after a quick look online I experienced a moment of deja vu seeing that the owners were familiar faces to me! To keep it short – in one of my previous lives (aka 10 years ago) I worked as a restaurant marketer. Through that restaurant’s giveback program I had the opportunity to work with the owner’s, Victor and Joe, through the charitable organization they’re involved with, MATTER, to create and distribute MATTERboxes (packs of premade food for those in need).
Because of their involvement with MATTER, I was also completely unsurprised to see that Kitchen and Rail has a mission of giving back to community organizations and causes ❤️.
Snacks:

Italian Donuts (Breakfast Style): Fried donuts rolled in cinnamon sugar, served with blueberry coulis and italian frosting
I impulse added the Italian Donuts to my order as a game-time decision, because I was craving something sweet. Husband laughed at me when I ordered it so I was beyond glad my gamble paid off and we were mind blown by how good they were. He agreed with me that it was the best dish we (which is saying a lot, because all the food was fantastic).

K&R Cheeseburger Sliders: 2 famous buttery sliders, secret seasoning, topped with government cheese, on brioche bun. Served with hamburger dills on the side
I’ve been pretty open before that I’m not exactly a breakfast person so I was very game to try out the cheeseburger sliders (which gave me quite the giggle to see “government cheese” listed as an ingredient…to be fair the whole menu has little jokes throughout, which I loved).

Meat Lovers Scramble: Bacon, pork belly, andouille sausage, pulled pork, crispy potato, topped with cheddar cheese and scallions
Pork Belly is husband’s love language so he decided to step out of his eggs benedict comfort zone and try something new. He really enjoyed the meat lover’s scramble.

Pork Belly Breakfast Sliders: Crispy pork belly, two fried eggs, cucumber, pickled fresno, pickled carrot, cilantro, sriracha mayo
The pork belly breakfast sliders were an add-on after our meal was finished. Like I explained, pork belly is an addiction for Husband and after he tasted how great everything else was he had to get it. So it gave me the perfect excuse to order another martini haha.
Drinks:

Espresso Martini and Old Fashioned
Husband and I both got our go-tos. There is never an espresso martini I don’t love and Husband is always testing out new old fashioned recipes.
Both drinks hit the mark.

Atmosphere/Service:

Kitchen and Rail is in a strip mall in Eagan next to a Chipotle and a pottery painting venue…to say it’s a diamond in the rough is an understatement. All in all, great service, great food, and really great vibe…once you’re inside 🙂
