I have been seeing a lot of meal prep people I follow on Instagram showcasing their sheet pan meals (or as husband calls them – “hobo meals”) and my body has been craving vegetables after a few weeks of pastas and fried foods so this felt like a great time to try it!

I’ll admit that husband cooked it, but I’m the one who planned and shopped for all the ingredients.

Easy Sheet Pan Meal

Ingredients:

  • 1 pk (4 links) Aidells Chicken & Apple Smoked Chicken Sausage
  • 1 Zucchini sliced and quartered
  • 1 yellow Zucchini sliced and quartered
  • 1/2 bag Broccoli florets (6ish oz)
  • 1/3 bag fingerling potatoes
  • 1/2 white onion chopped
  • 1 container fresh Thyme
  • Minced Garlic
  • Salt & Pepper to taste
  • Paprika

Prep:

  1. Cover a sheetpan with aluminum foil and spray with olive oil
  2. Slice, chop and quarter the sausages and vegetables and spread it around the pan
  3. Top with the thyme, salt, pepper, minced garlic, and paprika.
  4. Bake at 350 for 40ish minutes

I also decided to have some A1 for dipping, but that’s me!

Here are the macros according to myfitnesspal for the ENTIRE thing (sans A1). I’d say that realistically this is at least 6 servings.

Next time I’d also add mushooms, otherwise I really liked this and it was exactly what my body was craving.
