Very rarely do I deem any recipe I make worth sharing, but sometimes it feels appropriate to share one that even a pathetic chef like me can make that is worthy of serving to others haha.
Fried Rice with Riced Cauliflower
Ingredients:
- 1 Package Riced Cauliflower (no…I do not make my own)
- Could also easily use 2 servings of cooked rice instead
- 1 tsp Sesame Seed Oil
- 1 tsp Fish Sauce
- 1 Package Frozen Stir Fry Vegetables (obviously you could use fresh if you prefer)
- 1 tsp Minced Garlic
- 1 Tbsp Soy Sauce
- Sesame seeds (optional)
- 2 eggs (optional)
Prep:
- In a heated pan add sesame oil, fish sauce and minced garlic
- Add vegetables and cook on low for about 5 minutes
- Add riced cauliflower and soy sauce and cook until hot. Optional add sesame seeds.
- Optionally, cook 2 fried eggs and add to the pan
- Once heated throughout, plate and enjoy!
Fried rice
Air Fryed Tofu
Ingredients:
- 1 Package Extra Firm Tofu
- 1/2 tsp Sesame Seed Oil
- 1/2 tsp Soy Sauce
- 1/2 Onion Powder
- 1 tsp Garlic Salt
- 2 tsp Corn Starch
- 1 tsp paprika
Prep:
- Remove tofu block from container and press between paper towels to dry (be careful not to push too hard where it starts to break!) Tip: to make it crispier make the cubes smaller
- Then cut into 1″ish cubes
- In a mixing bowl place the cubes then add all ingredients, tossing the tofu and ensuring all surfaces are covered.
- Place in one layer in air fryer
- Air fry at 400 for 10 minutes.
You can easily serve these as an appetizer or by themselves, but I like to combine the two and add the tofu as a protein source!
