I’ve been an avid customer of Cut Da Carb flatbreads for a couple years, and one day I was trying to figure out an easy meal we could eat with chicken and threw this together. The excitement I felt when it actually tasted good was out of this world! I keep joking that this is a working title, but since I haven’t come up with anything better in the last 6 months it is what it is haha.
This recipe is in no ways groundbreaking, but it’s simple, has a big flavor, and keeps my carb intake low for my meal.
Buffalo Chicken Flatbread Casserole
Full Ingredients List:
- 2 lb chicken breasts
- 1/2 bottle Franks Red Hot
- 4 oz. crumbled bleu cheese
- 1 Hidden Valley Ranch Seasoning packet
- Shredded Cheddar Cheese (I’d say at least a 8oz, but you can make as cheesy as you want)
- 2 Cut Da Carb flatbreads
Step 1: Crockpot Buffalo Chicken
- 2 lb chicken breasts
- 1/2 bottle Franks Red Hot (6oz)
- 4 oz. crumbled bleu cheese
- 1 Hidden Valley Ranch Seasoning packet
- Combine all the above ingredients in a crockpot and cook on high 3ish hours
- You CAN do it without the bleu cheese, but I swear it adds a little something something without being overwhelming or really even super noticeable so I highly recommend keeping it in.
- Using two forks shred the chicken, mix and cook for another hour
Once the chicken is done, it is time to assemble the “casserole”
Step 2: Flatbread Casserole
- Shredded Cheddar Cheese (I’d say at least a 8oz, but you can make as cheesy as you want)
- 2 Cut Da Carb flatbreads
- In a greased sheet pan lay down 1 of the flatbreads
- Spread 1/2 of the buffalo chicken over the flatbread
- Sprinkle the shredded cheddar over the chicken mixture
- Repeat with 1 more layer
- Bake at 350 degrees for 20 minutes to crisp up the flatbread.

Some people would say this is 8 servings, but I generally cut it up into 6 pieces and call it 6 servings. There are also 9 net carbs with each flatbread so if you are tracking macros that makes my math easier with 3 carbs in flatbread per serving (9×2=18/6=3). Totals below.

While it’s not the most beautiful dish, I assure it is tastes delicious and works decent for leftovers also, it just loses it’s crispness (I have yet to try reheating it in the air fryer).
