I’ve been eagerly waiting for the opening of Royal Foundry Distillery. Housed in the same warehouse as La Dona Cerveceria these two are starting what is going to be a sweeping rejuvenation near Glenwood and Fremont in Minneapolis.

What’s The Dill: Gin, Cucumber-Infused Vodka, Dill Syrup, and Lime Juice
I’m obsessed with cucumber vodka and love anything dill flavored; pickels, chips, salmon…so clearly this was my drink. It was exactly as promised; crisp and botanical. It was definitely alcoholic, but the heat didn’t take away from the flavor. My friend, Mikayla ended up ordering the Professor.
The Professor: Gin, Rosemary, Lemon Peel, and Brown Sugar
The Professor is essentially a gin old fashioned and had a lot of heat, which made it a little hard to drink. The flavor was good, but it was really boozy.
We, unfortunately, didn’t have time for a second drink before our dinner reservation, but I’ve already scoped out my next drink based off the recommendation of the lady sitting next to us: the Ruby Collins.
Service/Atmosphere:
“A MINNEAPOLIS DISTILLERY WITH BRITISH SPIRIT”
I didn’t know what to expect and fell in love with the English decor. When I was in Europe I developed a fondness for phone booths and since then it’s been my tradition – see a phone booth = get inside it.
The space itself is huge with high ceilings, the industrial feel that’s common among breweries and distilleries in Minneapolis and in addition to bar seating, small tables, and a couple sitting areas, there is a huge private event space and a small indoor bowling area!
For craft cocktails the service was relatively quick and the bartenders were willing to answer our endless questions.
