A couple weeks ago I was giddy when I realized it was #NationalGrilledCheeseDay. My giddiness amplified when I texted my friend to meet for lunch and she happened to be at Red Cow in Uptown Minneapolis…exactly the place that a couple coworkers told me that same morning had a phenomenal Grilled Cheese. Clearly I was meant to have this Grilled Cheese (that’s my story and I’m sticking to it).

Food:

Red Cow Uptown Minneapolis Grilled Cheese

Grilled Cheese: Cheddar, gruyere, smoked gouda, BBQ chips on sourdough served with tomato soup

The BBQ chips in the grilled cheese had a delicious, albeit unexpected texture. The tomato soup was chunkier, almost a stew or salsa constancy. It wasn’t my favorite, but if we’re being honest, tomato soup really only exists to be a dip for the sandwich, so together, it did pair really well.

If you’re not a grilled cheese person, they are also known for their burgers!

Drinks:

Red Cow Moscow Mule

Mos Cow Mule: Pink Peppercorn infused vodka, house ginger beer, and lime juice

They have a pretty robust beer and cocktail menu. I chose the “Mos Cow mule,” which felt aggressive to be drinking at 11:30am, but I was done with work for the day so…YOLO? If you’re good with potent drinks, I would definitely recommend it, and if it’s a Friday at 11am and you’re done working for the day, I would not only recommend it, but also add that you likely deserve it haha.

There are four different locations; 50th & France, Uptown, St. Paul, and the North Loop.

Being in Uptown, parking will always be a bit of a challenge, but it’s worth it! I’ll definitely go back and try some of the other menu items, but I am very happy with how I celebrated #NationalGrilledCheeseDay.
